Cooking Instructions
Thooyamalli cooks beautifully into separate, pearly grains:
- Rinse: Wash the rice gently 2 times to retain its natural nutrients.
- Soak: Soak for 20–30 minutes before cooking to ensure even expansion.
- Cook (Pressure Cooker): Use a 1:2.5 rice-to-water ratio. Cook for 3 whistles on a medium flame.
- Cook (Open Pot): Use a 1:3 ratio. Cook until the grains are tender but firm, then drain the excess water.
- Serve: Its mild, nutty flavour makes it the perfect companion for South Indian Sambar, Kara Kuzhambu, or simple Rasam.
